RECIPE of the WEEK for MODER'S GARDENS
Beet and Kale Goat Cheese Crostini
3 medium beets, scrubbed and green removed
8 ounces goat cheese, softened
2 to 3 ounces or 1 bunch of kale, stems and ribs removed
Sliced baguette or crackers & balsamic vinegar and honey
Wrap beets individually in foil and bake at 400 degrees for 40 to 45 minutes, until fork tender. Let cool 10 minutes and unwrap carefully. Peel skin from beets and dice. Season with salt and pepper and add walnuts, set aside. Spread goat cheese onto baguette or crackers and place beet mixture on top. Top with chopped kale and drizzle balsamic and honey over each. Don’t throw those beet greens away- clean them and add a few leaves to smoothies!
